If they've given you full permission for running their books, you'd just want to create a separate business profile for each of your clients under your main Wave account along these lines.
If your customers will be doing the setup however, all they need to do afterwards is head to Settings > Users, and add you as an Edit or Admin collaborator by sending you an invite to your email. You can find out more here.
