Categories not appearing in Chart of Accounts?

I have a number of transactions categorized as Payroll - Salary and Wages. I am not sure whether this was a default or we added it, but either way that categoy appears when entering transactions, but does NOT appear anywhere in the Chart of Accounts. When I create a TEST category from the transactions page, it is automatically added to the COA. When I add a TEST from the COA page it subsequently apears in the expense category dropdowns. So what is up with this Salary and Wages category not appearing in the COA? It is in the transactions dropdown, it is being used...I am baffled
