I'm not sure what it is that you're asking about. You can edit the P.O. number on an invoice at any time the same way you would edit any detail on your invoice. Find that invoice, click on the arrow to its right and go to "Edit".
If you're asking about changing the title of the field from "P.O./S.O. Number" to something else, then no, it isn't possible. If that's the case, can I ask what you'd like to change it to? Maybe I can offer an alternative.
I see why you would want to put that number somewhere obvious. You could put that information in the "Notes" section of your invoice, or even add it to the Invoice number ("Invoice X - Tour Y").
