I received payment for an invoice but unfortunately the check became stale-dated. Does wave have subledgers in order to record this transaction correctly instead of removing the payment.

Sounds to me like you may benefit from writing off the invoice and creating a new one by following the steps in this article -->HERE<--
Otherwise we do not have a subledger or sub accounts available in Wave.
